Fix for this issue is now available in the latest update of InDesign 2021 – that is, InDesign 16.2.1
In the Creative Cloud Desktop application, click on the Updates section on the left. You should be able to see the Update available for InDesign. Please update your InDesign application to this version to try out the fix.

With InDesign 19.5 release, Swatches will always get Synchronized when Object Styles/Paragraph Styles/Character Styles are selected in the Synchronize Options dialog.
It has also been mentioned as one of the Fixed issues on https://helpx.adobe.com/indesign/kb/fixed-issues.html

To me it looks like the whole synchronization needs to be fixed: I just tried to do like Heike did and even the paragraph styles were synchronized althoughIi unchecked the corresponding box.

I checked it with several fonts, it happens not only with Minion Pro but with all fonts that have no "Book" font style.
And it looks like it's the same with "Roman": if you use a font with font style Roman (yeah, I found one in my font list, dunno why) which has no Book font style the search for Book will mark the Roman styled text.
