InDesign 2021 (InDesign 16.0) locked when left unattended for an hour.
This was installed for me overnight, and appeared to be running as expected. When I left my computer running for an hour while I ate lunch I came back to find the application locked. When I tried to force it to quit the entire machine locked, and I was required to force it to shut down and restart.

First thing: hasn't recurred. Was this an artifact of the installer.
Apps running: Excel, Avira VPN, Preview, Mail, Activity monitor MacOS is up to date Machine is a MacBook Air bought a month or so ago. 16GB memory, lots of space on HD.
I literally left my machine running and went off to do something else. Lunch took an hour. When I returned InDesign was not responding, said the OS. When I used activity monitor to kill it the whole machine locked. No data was lost after the restart, and I was able to use the machine uninterrupted for the next 7 or 8 hours.
