Multi-page PDF use in InDesign
When placing a multi-page PDF into an InDesign document - it would save so much time if it were possible to then scroll through the pages in that PDF and select the desired page from within InDesign.
This feature already exists. As mentioned by David and Bastia, you can turn on the “Show Import Options” from the Place dialog. Following which a dialog which can help you chose the page that you want and how many of the pages you want to place in InDesign.

I want to be able to change the inserted page after it's imported, without having to go File>Import>click import options on - and then inevitably forgetting to turn it off. It's so slow and clunky

If you want to bring in all the Pages of a Multi-page PDF in one single step (without the need to click again and again to place next page), you can use the built-in Script called "PlaceMultipagePDF.jsx" or "PlaceMultipagePDF.applescript" - you can find the script in the Scripts panel (Window > Utilities > Scripts, look under Samples).

That's not true - you can also do this using the import options...
You can import the current page from the preview, all or a page range... -

I'd rather wish to be able to place all pages in one step by clicking once to place one page and clicking again to place the next etc., like when placing mulitple files at once. So far ID only let's you place one page of a PDF with every Place action. That can be horror when placing 20 or more pages...

You can do that by checking the Show Import Options box in the Place dialog. It also lets you choose which page-box to clip with and whether or not the background is transparent. If the PDF is already imported you can use Relink to the same effect.
