Save as... Open, Place... dialog panels too small

In Big Sur, the Save as... (cmd-S) Open (cmd-O) and Place... (cmd-D) dialog boxes are too small. They only offer between three and six lines of text. However, you can drag the panel out to see more folders/files, BUT, it doesn't stick. When you've closed the dialog and open it again, it has reverted to the smaller size.

Photoshop doesn't seem to suffer with this issue, but Illustrator does.

Resizing these windows with every single file save is such a huge waste of time. I can not believe this wasn't addressed in testing. Do they even test before rollouts? C'mon Adobe.
