Think I have resolved it; didn't have the 'constrain proportions' enabled; although still not sure if this behaviour is the same as previous versions? I don't think it previously mattered whether constrain proportions was enabled or not for the auto-fit to still work?

As confirmed by a customer over the thread that the issue is fixed in InDesign 2020(v15.1.2.226).
We recommend you upgrade to either InDesign 2020(v15.1.2.226) or to the latest InDesign 2021(v16.0.0.77) for the fix.
If you are unable to see the update, go to the Creative Cloud application and click on the context menu on the top right and click on Check for App Updates.

The fix for this is now publicly available in the latest InDesign update, 15.1.1
Please update to the latest version to get the fix.

Seems to be related to PNG files embedded in the artwork, especially if they are using non-standard colour settings, eg Indexed Color.
These same files would generate PDFs fine under previous (15.0.x) version of InDesign.

To identify the cause of this issue, we started our investigation to resolve it. You might have also received an email from us seeking more details to help in our investigation.
We’ve concluded our investigation and came up with the following: Either the issue is fixed in the latest release of InDesign or the issue was intermittent at the time of its reporting and is not reproducible now.
We recommend you upgrade to the latest version of InDesign 2026(v21.0.1.006) as it is more robust and contains a lot of bug fixes.
We seek your support in our continual effort to improve InDesign.

Since upgarding to InDesign 2020 performance has slowed considerably. Selecting a frame takes ages, clicking the cursor in a different part of a text frame takes ages for the cursor to appear etc. Almost every action has a 2 or 3 second delay; whereas it would fly along on v14.
I have 20-core Xeon PC with 64 GB RAM and Nvidia Quadro K5000 graphics; so no slouch!

Also sometimes no longer recognises the first word within brackets, even if correctly spelt.
