   You could accomplish this objective by doing this:
   Close all open documents, open the Character panel (Ctrl-T) and change the Language option. Then every time you create a new document, your preferred language will be set for that document.

   I have a number documents, I have all my paragraph styles set to UK English. Have also tried your suggestion above and everywhere I can think of to change the language to UK English it is already set to it. Is there anywhere else I can set this? It's really frustrating!
