I have also had this issue since the update, and it's maddening. For some reason, tonight I got a paragraph style to let me type in a colon instead of using one of the dropdown options. I then tried to do the same in a p-style in the same document and it wouldn't work (which is when I went searching the forums and found this post).
I finally got it to work, though, so I kept trying — I canceled the p-style Edit window, and then opened it again — no idea how exactly, but I just kept trying to double-click on that field and after a dozen tries it let me highlight the text and type a colon into the second p-style I had been trying to make.
Sorry I don't have a more specific solution, but double-clicking using the trackpad as fast as possible seems to give a chance of getting the text in that field to select, and then you can type in a custom character. :/
