  1. It'd be so much more efficient to be able to put in a default value in editable form text fields in InDesign vs Acrobat.

    Agree. The only way I find is to export to interactive PDF, then in Acrobat Pro: "Prepare Form" and into the properties of the field, define the default value. Not the best way at all! Would be very useful to be able to define the default value directly in InDesign.
